Baking Banana Bread

If you’re like me and buy bananas with the intention of getting healthy and eating them as a snack, but ultimately forgetting they are in the fruit bowl until they then become black and mushy. Instead, why not give Banana Bread a try before throwing out your bananas.

Ingredients:

  • 140g Self-raising Flour
  • 2 Large eggs
  • 1 tsp Baking Powder
  • 2 Ripe Bananas
  • 140g Caster Sugar
  • 140g Butter
  • Chocolate drops optional

    Want to make this Gluten-free? Use GF Flour and add 1 extra tsp of baking powder.

Method:

Banana bread is definitely one of the easiest baking goods to make, it’s pretty much fool proof and the smell it gives off when it’s almost done baking is GORGEOUS!

Step 1: Whisk together your butter and caster sugar until you have a creamy texture.

Step 2: Next we’re going to add our 2 large eggs and half of the flour slowly.

Step 3: Add in the rest of your flour and your baking powder. Once this is added, mash up your bananas and add them in too. Do not over-mix at this point, we want to have nice chunks of banana instead the loaf.

Step 4: Move your mixture into a loaf tin (we’ve gone with a medium height, but a smaller tin will result in a taller loaf). Once you’ve poured your mixture into your tin, sprinkle with chocolate chips or chocolate chunks.. if you’re secretly a child like us!

Step 5: Pop it in the oven at 160c for 30 minutes. After 25 minutes, check it with a knife or skewer until it comes out clean. Leave to cool before removing and serving.
